Ingredients
  

  • 1 1/2 cups basmati rice
  • 3 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 2 bay leaves
  • 1 onion (sliced)
  • 2 tomatoes (chopped)
  • 1/2 cup peas
  • 1/2 cup carrots (diced)
  • 1/2 cup beans (chopped)
  • 2 green chilies (slit)
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions
 

Soak the Rice:

  • Rinse the basmati rice thoroughly and soak it in water for 20-30 minutes.

Sauté the Spices and Vegetables:

  • Heat oil or ghee in a large pot or pressure cooker.
  • Add cumin seeds and bay leaves. Let them splutter.
  • Add onions and sauté until golden brown.
  • Stir in the green chilies, tomatoes, carrots, beans, and peas. Cook for 5 minutes.

Add Spices and Rice:

  • Add turmeric, garam masala, and salt. Mix well.
  • Drain the soaked rice and add it to the pot. Gently stir to coat the rice with spices.

Cook the Pulao:

  • Add 3 cups of water and bring it to a boil.
  • Cover the pot and simmer on low heat for 15-20 minutes, or until the rice is fully cooked and water is absorbed.

Fluff and Garnish:

  • Turn off the heat and let the pulao rest for 5 minutes.
  • Fluff the rice with a fork and garnish with fresh coriander leaves.

Serve:

  • Serve hot with raita, yogurt, or pickles.

Notes

  • Variation: Add paneer or tofu for extra protein.
  • Storage: Store in the refrigerator for up to 2 days. Reheat before serving.
  • Serving Tip: Pair with cucumber raita and papad for a complete meal.
