- 1 1/2 cups basmati rice
- 3 tbsp oil or ghee
- 1 tsp cumin seeds
- 2 bay leaves
- 1 onion (sliced)
- 2 tomatoes (chopped)
- 1/2 cup peas
- 1/2 cup carrots (diced)
- 1/2 cup beans (chopped)
- 2 green chilies (slit)
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
Sauté the Spices and Vegetables:
Heat oil or ghee in a large pot or pressure cooker.
Add cumin seeds and bay leaves. Let them splutter.
Add onions and sauté until golden brown.
Stir in the green chilies, tomatoes, carrots, beans, and peas. Cook for 5 minutes.
Add Spices and Rice:
Add turmeric, garam masala, and salt. Mix well.
Drain the soaked rice and add it to the pot. Gently stir to coat the rice with spices.
Cook the Pulao:
Add 3 cups of water and bring it to a boil.
Cover the pot and simmer on low heat for 15-20 minutes, or until the rice is fully cooked and water is absorbed.
- Variation: Add paneer or tofu for extra protein.
- Storage: Store in the refrigerator for up to 2 days. Reheat before serving.
- Serving Tip: Pair with cucumber raita and papad for a complete meal.
