Ingredients
  

For Puri:

  • 2 cups whole wheat flour
  • 1/4 tsp salt
  • Water as needed
  • Oil (for deep frying)

For Bhaji:

  • 4 medium potatoes (boiled and cubed)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 8-10 curry leaves
  • 2 green chilies (chopped)
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp cumin powder
  • 1/4 tsp coriander powder
  • Fresh coriander leaves (for garnish)

Instructions
 

Prepare the Dough for Puri:

  • In a bowl, mix the whole wheat flour and salt.
  • Gradually add water and knead into a soft dough. Cover and rest for 15 minutes.

Roll the Puris:

  • Divide the dough into small balls. Roll each ball into a small disc (3-4 inches in diameter).

Fry the Puris:

  • Heat oil in a deep frying pan.
  • Fry each puri until it puffs up and turns golden brown. Drain on paper towels.

Prepare the Bhaji:

  • Heat oil in a pot. Add mustard seeds and let them splutter.
  • Add curry leaves and green chilies, sauté for a few seconds.
  • Add turmeric powder, cumin powder, coriander powder, and cubed potatoes.
  • Mix well and cook for 5-7 minutes. Add salt to taste.
  • Garnish with fresh coriander leaves.

Serve:

  • Serve the hot puris with the flavorful bhaji.

Notes

  • Add-ons: Serve with pickle or yogurt for extra flavor.
  • Storage: Store leftover bhaji in the fridge for up to 2 days.
  • Variation: Add peas or carrots to the bhaji for added texture.
