For Puri:

whole wheat flour

For Bhaji:

potatoes (boiled and cubed)

Instructions
Prepare the Dough for Puri:
In a bowl, mix the whole wheat flour and salt.
Gradually add water and knead into a soft dough. Cover and rest for 15 minutes.
Roll the Puris:
Divide the dough into small balls. Roll each ball into a small disc (3-4 inches in diameter).
Fry the Puris:
Heat oil in a deep frying pan.
Fry each puri until it puffs up and turns golden brown. Drain on paper towels.
Prepare the Bhaji:
Heat oil in a pot. Add mustard seeds and let them splutter.
Add curry leaves and green chilies, sauté for a few seconds.
Add turmeric powder, cumin powder, coriander powder, and cubed potatoes.
Mix well and cook for 5-7 minutes. Add salt to taste.
Garnish with fresh coriander leaves.
Serve:
Serve the hot puris with the flavorful bhaji.
