- 2 cups thin poha (flattened rice)
- 1/2 cup peanuts
- 1/4 cup roasted chana dal
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 8-10 curry leaves
- 2 green chilies, chopped
- 1/4 tsp turmeric powder
- 1 tbsp sugar
- Salt to taste
- 1/4 tsp asafoetida (hing)
Roast the Poha: Heat a large pan or wok on low heat. Dry roast the thin poha until they become crisp. Be sure to stir frequently to avoid burning. Once roasted, transfer to a large bowl and set aside. Prepare the Tempering:In the same pan, heat oil on medium heat. Add mustard seeds and cumin seeds. Let them splutter. Add green chilies, curry leaves, and peanuts. Stir and fry until the peanuts turn golden brown. Add Roasted Lentils:Add the roasted chana dal to the pan and continue stirring for a minute or two. Add Spices:Lower the heat and add turmeric powder, salt, sugar, and asafoetida. Mix well to combine the spices with the tempering. Mix Poha with the Tempering:Gently fold in the roasted poha and toss everything together, ensuring the poha is evenly coated with the spices and tempering. Cool and Store:Turn off the heat and allow the Poha Chivda to cool completely. Once cooled, store it in an airtight container to maintain its crispiness.
