Ingredients
  

For the Gravy:

  • 4 cup spinach leaves (blanched)
  • 1 onion (chopped)
  • 2 tomatoes (pureed)
  • 4 garlic cloves (chopped)
  • 2 green chilies (slit)
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • 2 tbsp oil or butter
  • Salt to taste

For the Paneer:

  • 200 gm paneer (cubed)
  • 1 tbsp cream (optional)
  • Butter for garnish

Instructions
 

Blanch the Spinach:

  • Boil water in a pot and blanch the spinach for 2 minutes.
  • Transfer to ice-cold water to retain the color.
  • Blend the spinach into a smooth puree.

Prepare the Gravy:

  • Heat oil in a pan and add cumin seeds.
  • Add chopped onions, garlic, and green chilies. Sauté until onions turn golden brown.
  • Add tomato puree, turmeric, and garam masala. Cook for 5-7 minutes.

Add the Spinach Puree:

  • Add the spinach puree to the pan and mix well.
  • Simmer for 5 minutes and adjust salt as needed.

Add Paneer Cubes and Cream:

  • Gently fold in the paneer cubes and let them cook for 2-3 minutes.
  • Add cream for extra richness (optional).

Serve Hot:

  • Garnish with butter and serve with roti, naan, or rice.

Notes

  • Variation: Add cashew paste for a richer texture.
  • Storage: Can be refrigerated for up to 2 days.
  • Serving Tip: Serve with garlic naan or jeera rice for an enhanced experience.
