For the Gravy:
- 4 cup spinach leaves (blanched)
- 1 onion (chopped)
- 2 tomatoes (pureed)
- 4 garlic cloves (chopped)
- 2 green chilies (slit)
- 1 tsp cumin seeds
- 1/2 tsp garam masala
- 2 tbsp oil or butter
- Salt to taste
For the Paneer:
- 200 gm paneer (cubed)
- 1 tbsp cream (optional)
- Butter for garnish
Blanch the Spinach:
Boil water in a pot and blanch the spinach for 2 minutes.
Transfer to ice-cold water to retain the color.
Blend the spinach into a smooth puree.
Prepare the Gravy:
Heat oil in a pan and add cumin seeds.
Add chopped onions, garlic, and green chilies. Sauté until onions turn golden brown.
Add tomato puree, turmeric, and garam masala. Cook for 5-7 minutes.
Add Paneer Cubes and Cream:
- Variation: Add cashew paste for a richer texture.
- Storage: Can be refrigerated for up to 2 days.
