Ingredients
  

For the Dough:

  • 2 cups whole wheat flour
  • 1/2 tsp salt
  • Water as required
  • 1 tbsp oil or ghee

For the Radish Filling:

  • 2 large radishes (grated)
  • 1 green chili (finely chopped)
  • 1/2 tsp red chili powder
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1/4 tsp amchur powder (dry mango powder)
  • 2 tbsp fresh coriander leaves (chopped)
  • Salt to taste
  • Ghee or oil (for cooking)

Instructions
 

  • 1. Prepare the Dough
    In a bowl, mix the whole wheat flour, salt, and water. Knead it into a soft dough.
    Add a tablespoon of oil and knead again for a minute. Cover the dough and let it rest for 15 minutes.
    2. Prepare the Radish Filling
    Grate the radishes and squeeze out the excess water.
    Mix the grated radish with chopped chili, cumin seeds, garam masala, red chili powder, amchur powder, coriander leaves, and salt.
    3. Roll and Stuff the Paratha
    Divide the dough into small balls. Roll out each ball into a small disc.
    Place a portion of the radish filling in the center.
    Fold the edges over the filling and flatten it slightly.
    Gently roll out the stuffed dough into a paratha, about 6-7 inches in diameter.
    4. Cook the Paratha
    Heat a tawa or griddle over medium heat. Place the paratha on the tawa and cook for 1-2 minutes until golden brown spots appear.
    Flip and apply ghee or oil on both sides. Cook for another 2-3 minutes until the paratha is crisp and cooked through.
    5. Serve Hot
    Serve the hot Mooli Paratha with yogurt, pickles, or butter for a complete meal.

Notes

  • Moisture Control: Make sure to squeeze the water from the grated radish to prevent the parathas from breaking.
  • Adjust Spices: Feel free to modify the spice levels according to your taste preference.
  • Use Ghee for Richness: Cooking the parathas with ghee gives them a rich, authentic flavor.
  • Storage: Store leftover parathas in an airtight container and reheat on a tawa for 2-3 minutes before serving.
