Equipment

  • Mixing bowls
  • Skewers
  • Grill or oven
  • Basting brush

Ingredients

  • 500g boneless chicken, cut into chunks
  • 1 cup thick yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoons red chili powder
  • 1 tablespoons turmeric powder
  • 1 tablespoons cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon vegetable oil
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions

  • In a large mixing bowl, combine yogurt, lemon juice, ginger-garlic paste, and all the spices. Mix well to form a smooth marinade.
  • Add the chicken chunks to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 6 hours or overnight for best results.
  • Preheat the grill or oven to 200°C (390°F). Thread the marinated chicken pieces onto skewers.
  • Grill the chicken kebabs for 15-20 minutes, turning occasionally and basting with oil or melted butter to prevent them from drying out.
  • Once the chicken is fully cooked and slightly charred, remove the skewers and let them rest for a few minutes.
  • Serve hot with a side of mint chutney, sliced onions, and lemon wedges. Garnish with fresh cilantro leaves.

Notes

  • Adjust the spice level by increasing or decreasing the amount of chili powder.
  • For an authentic smoky flavor, consider using a charcoal grill or adding a few pieces of charcoal to your oven grill.
