Equipment

  • Skewers
  • Grill or oven
  • Mixing bowl

Ingredients

  • 500 gm minced chicken
  • 1 onion (grated, excess moisture squeezed out)
  • 2 tbsp ginger-garlic paste
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric powder
  • 1 tbsp lemon juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint leaves
  • Salt to taste
  • 2 tbsp oil or ghee (for brushing)

Instructions

Prepare the Mixture:

  • In a mixing bowl, combine minced chicken, grated onion (with excess moisture removed), ginger-garlic paste, cumin powder, coriander powder, red chili powder, garam masala, turmeric powder, lemon juice, chopped cilantro, chopped mint, and salt.
  • Mix well until all the ingredients are combined.

Refrigerate:

  • Cover the mixture and refrigerate for at least 20 minutes. This helps the mixture hold together better when grilling.

Shape the Kebabs:

  • Divide the mixture into equal portions.
  • Take a skewer and shape each portion around the skewer, pressing gently to form an even cylindrical shape.

Grill the Kebabs:

  • Preheat your grill or oven to medium-high heat.
  • Place the kebabs on the grill or in the oven and cook for about 10-15 minutes, turning occasionally.
  • Brush with oil or ghee while grilling to keep the kebabs moist and enhance the flavor.

Serve:

  • Garnish with fresh cilantro and serve hot with mint chutney and lemon wedges.

Notes

  • Variation: You can add green chilies for extra spice.
  • Storage: Store leftover kebabs in an airtight container for up to 2 days. Reheat in an oven before serving.
  • Serving Tip: Serve with naan or pita bread for a complete meal.
