Ingredients
  

  • 500 gm boneless chicken thighs (cut into cubes)
  • 1/2 cup thick yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tbsp lemon juice
  • Salt to taste
  • 2 tbsp oil or ghee (for brushing)
  • Fresh coriander leaves for garnish
  • Onion and bell pepper cubes (optional, for skewering)

Instructions
 

Prepare the Marinade:

  • In a mixing bowl, combine yogurt, ginger-garlic paste, red chili powder, cumin powder, garam masala, turmeric powder, lemon juice, and salt. Mix well.

Marinate the Chicken:

  • Add the chicken cubes to the marinade, ensuring they are fully coated.
  • Let the chicken marinate for at least 30 minutes, preferably longer for deeper flavor.

Skewer and Grill:

  • Thread the marinated chicken pieces onto skewers. You can alternate with onion and bell pepper cubes if desired.
  • Grill the kebabs on a hot grill or in a preheated oven at 200°C (392°F) for 15-20 minutes, turning occasionally and brushing with oil or ghee, until fully cooked and slightly charred.

Serve:

  • Garnish with fresh coriander and serve hot with mint chutney, hummus, or naan.

Notes

  • Variation: Add more vegetables like zucchini or tomatoes for extra flavor.
  • Storage: Store leftovers in the refrigerator for up to 2 days. Reheat on a grill or oven before serving.
  • Serving Tip: Serve with a side of grilled vegetables or rice for a wholesome meal.
