- 4 cups grated carrots
- 1 cup full-fat milk
- 1 cup sugar
- 3 tbsp ghee
- ¼ tsp cardamom powder
- 2 tbsp chopped almonds and cashews
- 1 tbsp raisins
Heat ghee in a heavy-bottomed pan and add the grated carrots. Sauté for 5-6 minutes until the carrots soften.
Add milk and cook the carrots on medium heat, stirring occasionally, until the milk is absorbed and the carrots are cooked through (about 20 minutes).
Add sugar and continue cooking, stirring frequently, until the halwa thickens and the sugar dissolves completely.
Add cardamom powder and mix well. Cook for another 5 minutes.
In a separate pan, roast the chopped nuts and raisins in ghee until golden. Add them to the halwa and mix well.
Serve warm, garnished with extra nuts if desired.
