Ingredients
  

  • 3 medium potatoes (peeled and cubed)
  • 1 cup green peas (fresh or frozen)
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion (finely chopped)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

Prepare the Tempering:

  • Heat oil in a large pan over medium heat.
  • Add cumin seeds and let them splutter.

Cook the Onions and Tomatoes:

  • Add finely chopped onions and sauté until golden brown.
  • Add ginger-garlic paste and cook for another 2 minutes until fragrant.
  • Pour in the pureed tomatoes and cook until the oil separates from the masala (about 5 minutes).

Add Spices and Vegetables:

  • Add turmeric, red chili powder, coriander powder, and salt. Mix well.
  • Add cubed potatoes and green peas, and stir to coat them in the spice mixture.

Cook the Curry:

  • Pour in enough water to cover the vegetables.
  • Cover and cook for 15 minutes, or until the potatoes are tender.

Finish and Serve:

  • Add garam masala and mix well.
  • Garnish with fresh cilantro and serve hot with roti, paratha, or steamed rice.

Notes

  • Variation: You can add paneer or tofu for added protein.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Serving Tip: Add a dollop of yogurt on the side to balance the spice and enhance the flavor.
