- 3 medium potatoes (peeled and cubed)
- 1 cup green peas (fresh or frozen)
- 1 tbsp oil
- 1 tsp cumin seeds
- 1 onion (finely chopped)
- 2 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Cook the Onions and Tomatoes:
Add finely chopped onions and sauté until golden brown.
Add ginger-garlic paste and cook for another 2 minutes until fragrant.
Pour in the pureed tomatoes and cook until the oil separates from the masala (about 5 minutes).
Add Spices and Vegetables:
Add turmeric, red chili powder, coriander powder, and salt. Mix well.
Add cubed potatoes and green peas, and stir to coat them in the spice mixture.
Cook the Curry:
Pour in enough water to cover the vegetables.
Cover and cook for 15 minutes, or until the potatoes are tender.
Finish and Serve:
Add garam masala and mix well.
Garnish with fresh cilantro and serve hot with roti, paratha, or steamed rice.
- Variation: You can add paneer or tofu for added protein.
