Ingredients
  

  • 1 cup mixed vegetables (carrot, beans, cauliflower, peas)
  • 1 large onion, finely chopped
  • 1 tomato, chopped
  • 1 cup bell pepper (green, red, or yellow), chopped
  • 1 tbsp ginger-garlic paste
  • 1 tbsp Kolhapuri masala or garam masala
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tbsp fresh grated coconut (optional)
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions
 

  • Prepare the Masala: In a pan, heat oil and sauté the onions until golden brown. Add ginger-garlic paste and cook for another minute.
  • Add Spices: Stir in the turmeric powder, red chili powder, and Kolhapuri masala. Sauté until aromatic.
  • Add Vegetables: Add the mixed vegetables, bell peppers, and tomatoes. Stir well to coat with spices.
  • Cook: Add a splash of water if necessary, cover the pan, and cook for 15–20 minutes until vegetables are tender.
  • Finish with Coconut (Optional): Stir in the grated coconut for a richer texture.
  • Serve: Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.

Notes

  • For extra heat, add more red chili powder or green chilies.
  • Use fresh, seasonal vegetables for the best flavor.
  • Kolhapuri masala can be substituted with a mix of garam masala and extra chili powder.
