Equipment

Ingredients
  

  • 2 cups dosa batter (fermented rice and lentil batter)
  • 1 onion (finely chopped)
  • 1 tomato (chopped)
  • 1 green chili (chopped)
  • 1/4 cup fresh coriander leaves (chopped)
  • Salt to taste
  • Oil or ghee (for cooking)

Instructions
 

  • Heat a tawa or non-stick pan over medium heat and grease it with a little oil or ghee.
  • Pour a ladleful of batter onto the hot pan and spread it into a thick pancake.
  • Sprinkle chopped onions, tomatoes, green chilies, and coriander leaves evenly over the top.
  • Drizzle a little oil or ghee around the edges and cook for 2-3 minutes until the base is golden brown.
  • Flip the uttapam carefully and cook the other side for another 2 minutes.
  • Repeat the process with the remaining batter.
  • Serve hot with coconut chutney or sambar.

Notes

  • Batter Tip: Use properly fermented batter for the best taste and texture.
  • Customization: Add grated carrots or bell peppers for additional flavor.
  • Storage: Store leftover batter in the fridge and use within 2 days.
