Ingredients
  

  • 2 cups sprouted moth beans (matki)
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon garam masala
  • 1 teaspoon cumin seeds
  • Salt to taste
  • Fresh coriander, chopped (for garnish)
  • Farsan (mixture of sev, chivda)
  • Lemon wedges for serving

Instructions
 

  • Cook the Usal:
    Heat oil in a large pot. Add cumin seeds and let them splutter.
    Add onions, and sauté until golden brown.
    Add ginger-garlic paste, green chilies, and cook until aromatic.
    Add turmeric powder, red chili powder, and garam masala; sauté for a minute.
    Add tomatoes, cook until soft, and add the sprouted beans. Mix well.
    Add water, cover, and let it simmer for 20 minutes or until beans are soft.
  • Prepare the Tarri (spicy curry):
    In a separate pan, heat oil. Add onions, sauté until brown, then add spice powders.
    Add a little water and let it simmer to make a rich, spicy curry.
  • Assemble the Misal:
    In a bowl, add a layer of Usal, followed by a layer of farsan.
    Pour the spicy curry (tarri) on top.
    Garnish with chopped onions, coriander, and a squeeze of lemon juice.
  • Serve: Serve immediately with bread or pav on the side.
