- 1 cup rice flour
- 1 cup water
- 1 tbsp ghee
- 1 cup grated fresh coconut
- ¾ cup jaggery (grated)
- ¼ tsp cardamom powder
- A pinch of salt
Prepare the filling:Heat a pan over medium heat and add the grated coconut and jaggery. Stir until the jaggery melts and blends with the coconut.Add cardamom powder and cook until the mixture thickens slightly. Remove from heat and let it cool. Make the dough (Ukad):In a pan, boil water with a pinch of salt and ghee.Gradually add the rice flour, stirring constantly to avoid lumps.Once the mixture thickens, cover it and let it steam for 2 minutes.Remove from heat and knead the dough while it's still warm to make it soft and pliable. Shape the Modaks:Divide the dough into small balls. Flatten each ball and shape it into a small cup.Place the filling in the center and carefully bring the edges together to seal the Modak. If using a mold, press the dough and filling into the mold to get the shape. Steam the Modaks:Place the shaped Modaks in a steamer lined with banana leaves or parchment paper.Steam for 15-20 minutes on medium heat, until the Modaks become glossy. Serve:Let the Modaks cool slightly and serve warm.
