Ingredients for Ugadi Pachadi
- 1 small raw mango finely chopped
- 2 tbsp neem flowers fresh or dried
- 2 tbsp tamarind pulp
- 2 tbsp jaggery grated
- 2 cups water
- 2 green chilies finely chopped
- Salt to taste
Soak and extract tamarind pulp, and mix with jaggery until dissolved.
Add raw mango, neem flowers, green chilies, and salt. Stir well.
Adjust water for desired consistency and balance flavors.
- Store Ugadi Pachadi in the refrigerator for up to a day.
- For a less spicy version, reduce the number of green chilies.
- Ensure the neem flowers are fresh or properly dried for authenticity.
