Ingredients
  

For the Broth:

  • 2 Ibs pork bones (neck, knuckles, or backbones)
  • 1 onion halved
  • 6 cloves garlic crushed
  • 1 knob ginger sliced
  • 2 tbsp soy sauce
  • 1 tbsp mirin optional
  • water to cover the bones

For the Ramen:

  • 4 servings fresh ramen noodles
  • 4 soft-boiled eggs
  • 1 cup green onions sliced
  • 4 slices chashu pork optional
  • nori seaweed sheets
  • Bamboo shoots optional

Instructions
 

  • 1. Prepare the Broth: Rinse pork bones under cold water. In a large stockpot, cover the bones with water and bring to a boil. Skim off any impurities, then drain and rinse the bones.
    2. Simmer the Broth: Return the bones to the pot, cover with water, and bring to a boil. Add onion, garlic, and ginger. Lower the heat to a gentle simmer and cook for at least 10 hours, topping up water as needed.
    3. Strain the Broth: Strain the broth through a fine mesh strainer into a clean pot. Discard the solids. Season with soy sauce and mirin.
    4.Prepare the Toppings: While the broth simmers, prepare soft-boiled eggs, slice green onions, and any other toppings (chashu pork, nori, bamboo shoots).
    5. Cook the Noodles: Cook the ramen noodles according to the package instructions. Drain and divide among bowls.
    6. Assemble: Ladle the hot broth over the noodles. Top each bowl with sliced green onions, soft-boiled eggs, chashu pork, and any other desired toppings.
    7. Serve: Serve hot and enjoy your homemade Tonkotsu Ramen.

Notes

  • The longer you simmer the broth, the richer and more flavorful it will be. 10 to 12 hours is ideal.
  • For extra richness, add a spoonful of pork fat to each bowl before serving.
  • Use fresh ramen noodles for the best results, though dried noodles can be used as a substitute.
