- 1 cup sesame seeds (til)
- ¾ cup jaggery
- 2 tablespoons water
- 1 tablespoon ghee (optional)
- ½ teaspoon cardamom powder (optional)
Dry Roast the Sesame Seeds:Heat a pan on medium heat and dry roast the sesame seeds for 4-5 minutes until they turn light golden and start to pop. Set them aside to cool. Melt the Jaggery:In the same pan, add the jaggery and 2 tablespoons of water. Stir continuously until the jaggery melts completely and starts bubbling. Mix Sesame Seeds and Jaggery:Add the roasted sesame seeds to the melted jaggery and mix well until the seeds are evenly coated with the jaggery. Shape the Laddus:Grease your hands with a little ghee. While the mixture is still warm, take small portions and shape them into round laddus. If the mixture hardens, you can slightly heat it again to soften. Let It Cool:Place the laddus on a greased plate or tray and let them cool completely before serving.

Roasting Sesame Seeds: Ensure to roast the sesame seeds on medium heat to avoid burning them. Stir constantly until they become light golden and start to pop. Over-roasting can make the laddus bitter.

Jaggery Syrup Consistency: The melted jaggery should reach a soft-ball consistency. If it's too runny, the laddus won't bind well. If it's too thick, the laddus will be hard to shape.

Shaping the Laddus: It's best to shape the laddus when the mixture is warm. If it cools down and hardens, gently reheat the mixture for a few seconds to soften it again.
