Ingredients
  

  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese (or a cheese blend)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/2 cup cooked chicken (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Fresh cilantro (optional garnish)
  • Sour cream, salsa, guacamole for serving

Instructions
 

  • Prep the vegetables: In a skillet over medium heat, add the olive oil, onions, and bell peppers. Sauté until softened, about 3-4 minutes.
  • Season the filling: Stir in cumin, chili powder, and garlic powder. If adding chicken, mix it in with the vegetables and cook until heated through.
  • Assemble the quesadillas: Place a tortilla on a flat surface. Spread a generous amount of cheese, followed by the vegetable (and chicken) mixture. Top with more cheese and cover with another tortilla.
  • Cook the quesadilla: Heat a large skillet over medium heat. Place the quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  • Serve: Cut the quesadilla into wedges and serve with sour cream, salsa, and guacamole.

Notes

  • For a vegetarian version, skip the chicken and add more vegetables.
