Ingredients
  

  • 1 cup rice flour
  • 1/2 cup jaggery (grated)
  • 1 ripe banana (mashed)
  • 1/4 cup grated coconut (optional)
  • 1/4 tsp cardamom powder
  • 1/2 tsp baking soda
  • 1/2 cup water (adjust as needed)
  • Coconut oil or ghee for frying

Instructions
 

  • Prepare the Jaggery Mixture:
    In a small pan, melt the jaggery with a tablespoon of water over medium heat. Stir until it fully dissolves and forms a syrup. Set it aside to cool.
  • Make the Batter:
    In a mixing bowl, mash the ripe banana and mix it with rice flour, grated coconut (optional), cardamom powder, and baking soda. Slowly pour in the jaggery syrup and mix well. Add water as needed to get a smooth, thick batter. Let it rest for 10 minutes.
  • Heat the Appam Pan:
    Heat an appam pan over medium heat and add a teaspoon of coconut oil or ghee to each cavity.
  • Cook the Appam:
    Pour a ladleful of batter into each cavity of the appam pan. Cook for 2-3 minutes on each side, turning once, until golden brown and crispy.
  • Serve:
    Once the appams are golden and crisp on the outside, remove them from the pan and serve them warm.

Notes

  • You can store leftover batter in the refrigerator for up to two days.
  • If you prefer a crispier texture, use more oil or ghee during frying.
  • Sweet Appam can be made gluten-free by using gluten-free rice flour.
