  • 4 large bell peppers (red, yellow, or green)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice (or quinoa for a healthier option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup canned diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella or cheddar cheese

Instructions
 

  • Prepare the peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds. Lightly roast the empty peppers for 10 minutes in the oven.
  • Make the filling: In a skillet over medium heat, cook the ground meat until browned. Add the chopped onion and minced garlic, and cook until fragrant. Stir in the cooked rice, canned diced tomatoes, Italian seasoning, salt, and pepper.
  • Stuff the peppers: Spoon the prepared filling into the roasted peppers and place them in a baking dish. Top each pepper with shredded cheese.
  • Bake the peppers: Cover the dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, until the cheese is melted and slightly golden.
