Ingredients
  

For the Shish Kebabs:

  • 500 gm boneless chicken, lamb, or beef cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch cubes
  • 1 yellow bell pepper cut into 1-inch cubes
  • 1 large red onion cut into wedges
  • 1 zucchini sliced into thick rounds
  • 1 tbsp olive oil for basting

For the Marinade:

  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1 tsp dried oregano
  • Fresh parsley chopped, for garnish

Instructions
 

  • 1. Prepare the Marinade
    In a large mixing bowl, whisk together the olive oil, lemon juice, garlic, cumin, coriander, smoked paprika, black pepper, salt, and oregano until well combined.
    2. Marinate the Meat
    Add the cubed meat to the marinade, ensuring all pieces are coated evenly. Cover the bowl and refrigerate for 2-4 hours (or overnight for more flavor).
    3. Assemble the Kebabs
    If using bamboo skewers, soak them in water for 30 minutes to prevent burning.Thread the marinated meat, bell peppers, onion wedges, and zucchini slices alternately onto the skewers. Brush the vegetables lightly with olive oil.
    4. Grill the Shish Kebabs
    Preheat your grill or grill pan to medium-high heat.Place the skewers on the grill and cook for 12-15 minutes, turning every 3-4 minutes, until the meat is fully cooked and the vegetables are slightly charred. Use a meat thermometer to check the internal temperature (165°F for chicken, 145°F for beef or lamb).
    5. Serve
    Remove the skewers from the grill and garnish with fresh parsley. Serve hot with lemon wedges and your favorite side dishes, such as rice, pita bread, or a fresh salad.
