Ingredients
  

  • 800g Raclette cheese (sliced)
  • 12 small potatoes (boiled)
  • 150g pickled onions
  • 150g cornichons (small pickles)
  • 100g assorted charcuterie (optional)
  • Freshly ground black pepper

Instructions
 

  • Prepare the ingredients: Boil the potatoes until tender. Arrange the pickled onions, cornichons, and charcuterie on a serving platter.
  • Heat the cheese: Place the Raclette cheese slices on the Raclette grill or tabletop grill. Allow the cheese to melt and slightly brown on the edges.
  • Serve: Scrape the melted cheese onto the boiled potatoes, and serve with the pickles and charcuterie.
  • Season and enjoy: Add freshly ground black pepper and enjoy your Raclette with the sides.

Notes

For a twist, you can add roasted vegetables or sprinkle chili flakes on the cheese for extra flavor. Wine is a classic pairing, especially a crisp white wine like a Swiss Fendant.
