Equipment

  • Large skillet or griddle
  • Spatula
  • knife

Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked chicken, beef, or vegetables optional
  • 2 tbsp butter or oil for cooking
  • salsa, guacamole, or sour cream for serving

Instructions

  • 1. Prepare the Filling
Shred the cheese and set aside. If using meat or vegetables, make sure they are pre-cooked and chopped into small pieces.
    2. Assemble the Quesadillas
Lay one tortilla flat on a clean surface. Sprinkle a generous layer of shredded cheese over half of the tortilla. Add your desired fillings (chicken, beef, or vegetables) on top of the cheese. Fold the tortilla in half to enclose the fillings.
    3. Cook the Quesadillas
Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter or drizzle with oil. Place the folded quesadilla in the pan and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
    Slice and Serve
Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve with salsa, guacamole, or sour cream for dipping.

Notes

  • Feel free to customize your quesadillas with any fillings you like, such as black beans, sautéed peppers, onions, or even jalapeños for extra heat.
  • If you prefer a healthier option, use whole wheat tortillas and lower-fat cheese.
  • Quesadillas are best served hot and crispy but can be reheated in the oven or on the stovetop if needed.
