Ingredients
  

  • 4 medium potatoes (boiled and cubed)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion (finely chopped)
  • 2 tomatoes (chopped)
  • 1 green chili (slit)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions
 

Heat the Oil:

  • Heat oil in a pan and add cumin seeds. Let them splutter.

Sauté Onions and Spices:

  • Add chopped onions and sauté until golden brown.
  • Stir in the ginger-garlic paste and green chili. Cook for 1 minute.

Add Tomatoes and Spices:

  • Add chopped tomatoes, turmeric, coriander, and red chili powder. Cook until the tomatoes soften.

Simmer:

  • Add a little water and let the curry simmer for 10 minutes. Adjust salt as needed.

Finish with Garam Masala:

  • Sprinkle garam masala and stir well.

Garnish and Serve:

  • Garnish with fresh coriander leaves.
  • Serve hot with roti, naan, or rice.

Notes

  • Variation: Add peas for a pop of sweetness and color.
  • Storage: Can be refrigerated for up to 2 days. Reheat before serving.
  • Serving Tip: Enjoy with plain yogurt or pickles for a complete meal.
