- 1 cup basmati rice (soaked and ground to a coarse paste)
- 4 cups full-fat milk
- 1/2 cup sugar
- 1/4 tsp cardamom powder
- 10-12 strands saffron (optional)
- 10-12 chopped pistachios and almonds (for garnishing)
Soak basmati rice for 30 minutes and then grind it into a coarse paste.
Heat milk in a heavy-bottomed pan, bringing it to a boil.
Add the ground rice paste to the milk while stirring continuously to avoid lumps.
Cook on low heat, stirring occasionally until the milk thickens and the rice is cooked. This will take about 20 minutes.
Add sugar and cardamom powder and cook for another 5-10 minutes until fully dissolved.
Remove from heat, add saffron strands (optional), and let the Phirni cool.
Once cooled, pour it into earthen bowls or serving dishes.
Garnish with chopped pistachios and almonds.
Refrigerate for at least 2 hours before serving.
