Equipment

  • Murukku press
  • Mixing bowl
  • Deep frying pan
  • Slotted spoon

Ingredients

  • 2 cups rice flour
  • 1/4 cup urad dal flour (black gram flour)
  • 1 tbsp sesame seeds
  • 1 tbsp cumin seeds
  • 1/4 tsp asafoetida (optional)
  • 1 tbsp butter (at room temperature)
  • Salt to taste
  • Water (as required to form dough)
  • Oil for deep frying

Instructions

  • Prepare the Dough: In a mixing bowl, combine rice flour, urad dal flour, sesame seeds, cumin seeds, asafoetida, butter, and salt. Gradually add water and knead to form a soft, non-sticky dough.
  • Shape the Murukku: Grease the Murukku press and fill it with dough. Press out the dough into spiral shapes onto small parchment squares.
  • Heat the Oil: Heat oil in a deep frying pan over medium heat.
  • Fry the Murukku: Once the oil is hot, carefully drop the shaped Murukku into the oil. Fry until golden brown, turning occasionally for even cooking.
  • Drain and Cool: Use a slotted spoon to remove the Murukku and drain it on paper towels. Allow to cool completely before storing in an airtight container.

Notes

  • To make your Murukku gluten-free, ensure that the rice and urad dal flour are gluten-free certified.
  • You can also add a pinch of chili powder for a spicy version.
