Ingredients
  

  • 2 tbsp sesame oil
  • 2 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • 4 cups chicken or vegetable stock
  • 1 cup dashi stock
  • 2 servings fresh ramen noodles
  • 2 soft-boiled eggs
  • 4 slices of pork belly optional
  • ½ cup bean sprouts
  • 2 tbsp sliced green onions
  • 1 sheet nori seaweed, cut into strips
  • 1 tsp chili oil optional

Instructions
 

  • Heat sesame oil in a pot over medium heat. Add garlic and ginger, stirring until fragrant.
  • Stir in miso paste and soy sauce, blending well.
  • Slowly pour in chicken and dashi stocks, whisking to dissolve the miso paste. Bring to a gentle boil, then simmer for 20 minutes.
  • Cook ramen noodles according to package instructions. Drain and set aside.
  • Assemble the bowls: Divide noodles into bowls, ladle the broth over them, and top with soft-boiled eggs, pork belly, bean sprouts, and green onions.
  • Garnish with nori strips and chili oil. Serve hot.

Notes

  • Use white or red miso depending on your preference for sweetness or saltiness.
  • For a vegetarian version, replace pork belly with tofu and use vegetable stock.
