Mishti Doi

A creamy and caramelized sweet yogurt dessert from Bengal, made with milk, sugar, and yogurt.

Ingredients
  

  • 1 liter full-fat milk
  • 1/2 cup sugar
  • 2 tbsp fresh yogurt
  • 1/4 tsp cardamom powder optional

Instructions
 

  • Heat milk in a pan and reduce it to half the volume.
  • Caramelize sugar in a separate pan and mix it into the milk.
  • Let the milk cool to lukewarm, then add yogurt and mix.
  • Pour the mixture into pots and allow it to set in a warm place for 6-8 hours.
  • Chill in the refrigerator before serving.

Notes

  • Use fresh yogurt for effective fermentation.
  • Adjust sugar quantity based on your preferred sweetness level.
  • Setting in earthen pots enhances the flavor and texture.
