For Puri:
- 1 cup semolina (rava)
- 1/4 cup all-purpose flour (maida)
- Salt to taste
- Water as needed
- Oil for frying
For Masala Gravy:
- 1 cup dried peas (soaked overnight)
- 2 tbsp oil
- 1 onion (chopped)
- 1 tomato (chopped)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp garam masala
Toppings:
- Tamarind chutney
- Green chutney
- 1/4 cup onions (finely chopped)
- Sev for garnish
- Fresh coriander leaves
Prepare the Puri Dough:
In a bowl, mix semolina, all-purpose flour, and salt.
Add water gradually to form a stiff dough. Let it rest for 10 minutes.
Prepare the Masala Gravy:
Pressure cook the soaked peas with water and salt until soft.
Heat oil in a pan, add cumin seeds, onions, and tomatoes, and sauté.
Add turmeric, garam masala, and the cooked peas. Simmer for 10 minutes.
Assemble the Masala Puri:
Place puris on a plate and lightly crush them.
Pour the hot masala gravy over the puris.
Drizzle tamarind and green chutneys on top.
Garnish and Serve:
Sprinkle onions, sev, and fresh coriander leaves.
Serve immediately for the best taste.
