Ingredients
  

  • 500g paneer (homemade or store-bought)
  • 1 liter full-fat milk
  • ½ cup sugar
  • ½ teaspoon cardamom powder
  • 10-12 saffron strands
  • 2 tablespoons pistachios, chopped
  • 2 tablespoons almonds, chopped
  • 2 tablespoons rose water

Instructions
 

  • Prepare the Malai:
    In a heavy-bottomed pan, bring milk to a boil and reduce to a simmer.
    Stir occasionally and let it thicken to half its original quantity.
    Add sugar, saffron strands, cardamom powder, and rose water. Simmer until the malai is creamy and thick. Set aside to cool.
  • Cut the Paneer:
    Cut the paneer block into thin rectangular slices, resembling bread slices.
  • Layer the Sandwich:
    On one paneer slice, spread a generous amount of prepared malai.
    Top with another paneer slice, creating a sandwich. Repeat with the remaining paneer slices.
  • Garnish:
    Sprinkle chopped pistachios and almonds over the sandwiches for added crunch and flavor.
  • Chill and Serve:
    Refrigerate the Malai Sandwiches for about 1 hour before serving to let the flavors meld and the texture firm up.

  • You can substitute sugar with jaggery or honey for a healthier version.
  • Add rose petals for a more traditional look and aroma.
  • Ensure the paneer is soft and fresh to make the sandwich light and fluffy.
