Ingredients
  

  • 2 cups cooked rice (preferably cooled or leftover)
  • tablespoons fresh lemon juice
  • 1 tablespoon oil (preferably sesame or sunflower oil)
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 2 green chilies, chopped
  • 8-10 curry leaves
  • 2 tablespoons peanuts or cashews
  • Salt to taste
  • Fresh coriander for garnish (optional)

Instructions
 

  • Prepare the Rice: If using freshly cooked rice, allow it to cool to avoid clumping.
  • Heat Oil: In a small pan, heat oil over medium flame.
  • Temper the Spices: Add mustard seeds and let them splutter. Add green chilies, curry leaves, and turmeric powder, stirring until aromatic.
  • Add Nuts: Add peanuts or cashews, stirring until they are golden and crispy.
  • Combine with Rice: Pour this tempering over the cooled rice. Add salt and fresh lemon juice.
  • Mix and Serve: Gently mix everything until the rice is evenly coated. Adjust salt and lemon juice if needed. Garnish with coriander and serve warm or at room temperature.

Notes

For extra flavor, add a pinch of hing (asafoetida) while tempering the spices. You can adjust the spice level by adding or reducing green chilies.
