Ingredients for Jackfruit Filling

  • 2 cups young green jackfruit shredded
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tbsp lime juice
  • Salt and pepper to taste

Ingredients for Toppings

  • 8 small corn tortillas
  • Fresh cilantro chopped
  • 1 avocado sliced
  • 1 small red onion thinly sliced
  • 1/4 cup vegan sour cream or cashew cream
  • Salsa or hot sauce to taste

Instructions
 

  • Sauté onion, garlic, and red bell pepper in olive oil, then add the shredded jackfruit and spices.
  • Cook for 10-12 minutes until the jackfruit is tender.
  • Warm the tortillas and assemble with jackfruit, avocado, red onion, cilantro, and vegan cream.
  • Serve immediately with salsa or hot sauce.

Notes

  • Add extra lime or hot sauce for a tangier and spicier flavor.
  • Leftover jackfruit filling can be stored in the fridge for 2-3 days.
