Ingredients for Jackfruit Filling
- 2 cups young green jackfruit shredded
- 1 tbsp olive oil
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 red bell pepper chopped
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1 tbsp lime juice
- Salt and pepper to taste
Ingredients for Toppings
- 8 small corn tortillas
- Fresh cilantro chopped
- 1 avocado sliced
- 1 small red onion thinly sliced
- 1/4 cup vegan sour cream or cashew cream
- Salsa or hot sauce to taste
Sauté onion, garlic, and red bell pepper in olive oil, then add the shredded jackfruit and spices.
Cook for 10-12 minutes until the jackfruit is tender.
Warm the tortillas and assemble with jackfruit, avocado, red onion, cilantro, and vegan cream.
Serve immediately with salsa or hot sauce.
