Ingredients
  

  • 2 cups cooked or canned chickpeas
  • 1/3 cup tahini
  • 2 tbsp virgin olive oil plus extra for garnish
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 1/2 tsp cumin optional
  • Salt to taste
  • 2-4 tbsp Ice water
  • Paprika or za'atar for garnish

  • 1. Prepare the Chickpeas:If using canned chickpeas, drain and rinse them. For an extra creamy texture, peel the chickpeas by gently rubbing them to remove the skins.
    2. Blend the Ingredients:In a food processor or blender, combine the chickpeas, tahini, lemon juice, olive oil, garlic, cumin (if using), and salt. Process the mixture until smooth.
    3. Add Ice Water:While the food processor is running, gradually add ice water one tablespoon at a time until the hummus reaches your desired creamy consistency.
    4. Adjust Seasoning:Taste the hummus and adjust the salt, lemon juice, or tahini according to your preference.
    5. Garnish and Serve:Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle paprika or za'atar on top. Serve with pita bread, fresh veggies, or as a spread.

Notes

  • For a spicier hummus, add a pinch of cayenne pepper or a dash of hot sauce.
  • Leftover hummus can be stored in an airtight container in the refrigerator for up to a week.
