Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups spinach leaves
  • 2 cups kale, chopped
  • 1 cup broccoli florets
  • 1 zucchini, chopped
  • 1 medium potato, diced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh herbs (parsley, thyme, or basil) for garnish

Instructions
 

  • Heat the olive oil in a large soup pot over medium heat. Add the chopped onion and minced garlic, and sauté until soft and fragrant, about 3 minutes.
  • Add the spinach, kale, broccoli, zucchini, and potato. Stir well to combine, cooking for an additional 3 minutes.
  • Pour in the vegetable broth, season with salt and pepper, and bring the soup to a boil. Reduce the heat and simmer for 15-20 minutes until the vegetables are tender.
  • Use an immersion blender to blend the soup to a smooth consistency or transfer it in batches to a blender.
  • Serve hot, garnished with fresh herbs and a drizzle of olive oil if desired.

Notes

  • For a heartier soup, add in cooked quinoa or beans.
  • You can add a splash of coconut milk for extra creaminess if desired.
