Ingredients
  

  • 1 kg 1 kg
  • 1 liter full-fat milk
  • 3/4 cup sugar
  • 4 tbsp ghee (clarified butter)
  • 1/2 tsp cardamom powder
  • 1/4 cup cashews, almonds, and pistachios (chopped)
  • 1/4 cup raisins

Instructions
 

Grate the Carrots:

  • Wash and peel the carrots. Grate them finely using a grater.

Cook the Carrots:

  • In a large pan, heat 2 tablespoons of ghee. Add the grated carrots and sauté on medium heat for 5-7 minutes until they soften slightly.

Add the Milk:

  • Pour the full-fat milk into the pan with the carrots. Cook on low heat, stirring occasionally, until the milk reduces and the carrots are fully cooked (about 20-25 minutes).

Add Sugar and Ghee:

  • Stir in the sugar and the remaining ghee. Continue cooking until the sugar dissolves, and the mixture thickens.

Finish with Spices and Nuts:

  • Add cardamom powder, chopped nuts, and raisins. Mix well and cook for another 5 minutes.

Serve:

  • Garnish with more dry fruits and serve warm or cold.

Notes

  • Variation: You can add khoya (mawa) for extra richness.
  • Storage: Store leftover halwa in the refrigerator for up to 3 days.
  • Serving Tip: Serve warm with a scoop of vanilla ice cream for a delicious contrast.
