Equipment

  • Large glass jar
  • Strainer
  • Non-metallic spoon
  • Bottles with airtight lids

Ingredients
  

  • 4 cups filtered water
  • 2 tbsp sugar raw or organic
  • 2 tbsp water kefir grains or kombucha starter
  • 1 cup fresh fruits sliced or diced
  • Fresh herbs e.g., mint, basil
  • 1- inch ginger optional

Instructions
 

  • Dissolve sugar in water and add kefir grains or kombucha starter.
  • Ferment for 24-48 hours. Strain and add fruits and herbs.
  • Optionally ferment again for carbonation. Refrigerate and serve chilled.

Notes

 
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Always taste-test during fermentation to find your preferred flavor.
  • Ensure jars and bottles are clean to avoid contamination.
