  • 400 gm fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 2 cloves garlic
  • Salt
  • black pepper to taste
  • Fresh parsley

  • 1. Cook the fettuccine:In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente (around 8-10 minutes). Reserve 1/2 cup of pasta water and then drain the pasta.
    2. Prepare the Alfredo sauce:In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer.
    3. Add the cheese:Slowly whisk in the grated Parmesan cheese, stirring constantly until the cheese has fully melted and the sauce becomes smooth and creamy. Season with salt and pepper to taste.
    4. Combine pasta and sauce:Add the cooked fettuccine into the sauce. Use tongs or a pasta spoon to toss the noodles, making sure they are fully coated in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.
    5. Garnish and serve:Garnish with freshly chopped parsley and extra Parmesan cheese if desired. Serve immediately while the pasta is warm and creamy.

  • For a richer flavor, you can use half and half instead of heavy cream, but heavy cream gives the sauce its classic creamy texture.
