- 500 gm baby potatoes (boiled and peeled)
- 3 tbsp oil
- 1 tsp cumin seeds
- 2 onions (finely chopped)
- 1 tbsp ginger-garlic paste
- 3 tomatoes (pureed)
- 1/2 cup yogurt (whisked)
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Prepare the Gravy:
In the same pot, add 1 tablespoon of oil and cumin seeds. Let them splutter.
Add the chopped onions and sauté until golden brown.
Add ginger-garlic paste and cook for 2 minutes until fragrant.
Add Tomatoes and Spices:
Add the pureed tomatoes, turmeric powder, red chili powder, coriander powder, and salt.
Cook until the oil separates from the masala and the gravy thickens.
Add Yogurt and Potatoes:
Lower the heat and add the whisked yogurt, stirring continuously to avoid curdling.
Add the fried potatoes to the gravy and mix well.
Cover the pot and cook on low heat for 10-15 minutes, allowing the flavors to infuse.
