Ingredients
  

For the Noodles:

  • 400 grams wheat noodles
  • 2 tablespoons sesame oil

For the Pork Topping:

  • 300 grams ground pork
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

For the Sauce:

  • 1/4 cup chili oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame paste
  • 1 tablespoon rice vinegar
  • 2 cloves garlic minced
  • 1 teaspoon Sichuan peppercorns ground

For Garnish:

  • Chopped scallions
  • Crushed peanuts
  • Fresh cucumber julienned

Instructions
 

Prepare the Sauce:

  • In a mixing bowl, combine chili oil, soy sauce, sesame paste, rice vinegar, garlic, and ground Sichuan peppercorns. Stir until smooth.

Cook the Noodles:

  • In a large pot, bring water to a boil.
  • Cook the noodles according to the package instructions until al dente. Drain and toss with sesame oil to prevent sticking.

Cook the Pork:

  • In a frying pan, heat 1 tablespoon of oil over medium heat.
  • Add the ground pork, soy sauce, Shaoxing wine, sugar, and salt. Cook for 5-7 minutes until the pork is browned and slightly crispy.

Assemble the Dish:

  • Divide the cooked noodles among bowls.
  • Pour the spicy sauce over the noodles and mix well.
  • Top with the cooked ground pork.

Garnish and Serve:

  • Garnish with chopped scallions, crushed peanuts, and fresh cucumber.
  • Serve hot.

Notes

  • Variation: Substitute ground chicken or turkey for pork for a lighter version.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a pan before serving.
  • Serving Tip: Adjust the amount of chili oil based on your spice preference. Start with less and add more if you like it spicier.
