Equipment

Ingredients
  

  • 1 cup dried chickpeas (soaked overnight)
  • 2 tbsp oil
  • 1 onion (finely chopped)
  • 2 tomatoes (pureed)
  • 2 green chilies (slit)
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp amchur powder (dry mango powder)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions
 

Cook the Chickpeas:

  • In a pressure cooker, add soaked chickpeas, salt, and water.
  • Cook for 4-5 whistles until the chickpeas are soft.

Prepare the Masala:

  • Heat oil in a pan and add cumin seeds. Let them splutter.
  • Add chopped onions and sauté until golden brown.
  • Stir in tomato puree, turmeric, red chili powder, and garam masala. Cook until the oil separates.

Combine Chickpeas with Masala:

  • Add the cooked chickpeas to the pan and mix well.
  • Simmer for 10-12 minutes to let the flavors blend.

Finish with Amchur and Garnish:

  • Add amchur powder and stir well.
  • Garnish with fresh coriander leaves.

Serve Hot:

  • Serve with rice, naan, or bhature for the best experience.

Notes

  • Variation: Add boiled potatoes to make Aloo Chole.
  • Storage: Store leftovers in the refrigerator for up to 2 days. Reheat gently before serving.
  • Serving Tip: Enjoy with a side of pickles or yogurt for extra flavor.
