- 1 cup dried chickpeas (soaked overnight)
- 2 tbsp oil
- 1 onion (finely chopped)
- 2 tomatoes (pureed)
- 2 green chilies (slit)
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- 1/2 tsp amchur powder (dry mango powder)
- Salt to taste
- Fresh coriander leaves for garnish
Cook the Chickpeas:
In a pressure cooker, add soaked chickpeas, salt, and water.
Cook for 4-5 whistles until the chickpeas are soft.
Prepare the Masala:
Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Stir in tomato puree, turmeric, red chili powder, and garam masala. Cook until the oil separates.
Combine Chickpeas with Masala:
Finish with Amchur and Garnish:
- Variation: Add boiled potatoes to make Aloo Chole.
- Storage: Store leftovers in the refrigerator for up to 2 days. Reheat gently before serving.
