Equipment

  • Skillet or Frying Pan
  • Baking Sheet (if baked)
  • Tongs
  • Mixing bowl

Ingredients

  • 2 cups shredded cooked chicken (rotisserie works great)
  • 8 small corn or flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Vegetable oil (for frying, optional)
  • Salsa, guacamole, or sour cream for serving

Instructions

  • In a mixing bowl, combine shredded chicken, chili powder, cumin, garlic, and cheese. Season with salt and pepper to taste.
  • Warm the tortillas in a microwave or on a skillet for 10-15 seconds to make them pliable.
  • Place about 2 tablespoons of the chicken mixture onto each tortilla, then roll them tightly.
  • To bake: Preheat the oven to 400°F (200°C). Place the taquitos on a baking sheet, seam side down, and bake for 12-15 minutes until crispy.
  • To fry: Heat about ½ inch of oil in a skillet over medium heat. Fry the taquitos seam side down until golden brown, turning occasionally for even crisping (about 2-3 minutes per side). Drain on paper towels.
  • Serve hot with salsa, guacamole, or sour cream.

Notes

  • For a healthier option, you can bake the taquitos instead of frying them.
  • You can swap chicken for beef or beans if you prefer different fillings.
  • Serve with extra toppings like lettuce, diced tomatoes, or shredded cheese for added flavor.
