- 4 chicken breasts, pounded thin
- Salt and pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- 3 tablespoons olive oil
- 1/4 cup lemon juice, freshly squeezed
- 1/2 cup chicken broth
- 2 tablespoons capers, rinsed
- 4 tablespoons unsalted butter
- Fresh parsley, chopped (for garnish)
Season the chicken breasts with salt and pepper and dredge lightly in flour.
Heat olive oil in a skillet over medium-high heat. Cook the chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add the lemon juice, chicken broth, and capers. Bring to a simmer, scraping up browned bits from the bottom of the skillet.
Add the butter and whisk until the sauce thickens slightly.
Return the chicken to the skillet to coat with the sauce.
Garnish with chopped parsley and serve over pasta or with vegetables.

For a richer sauce, add a splash of white wine to the lemon juice and broth mixture. You can also substitute butter with a dairy-free alternative for a lighter version.
