Ingredients
  

  • 4 chicken breasts, pounded thin
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 3 tablespoons olive oil
  • 1/4 cup lemon juice, freshly squeezed
  • 1/2 cup chicken broth
  • 2 tablespoons capers, rinsed
  • 4 tablespoons unsalted butter
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Season the chicken breasts with salt and pepper and dredge lightly in flour.
  • Heat olive oil in a skillet over medium-high heat. Cook the chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside.
  • In the same skillet, add the lemon juice, chicken broth, and capers. Bring to a simmer, scraping up browned bits from the bottom of the skillet.
  • Add the butter and whisk until the sauce thickens slightly.
  • Return the chicken to the skillet to coat with the sauce.
  • Garnish with chopped parsley and serve over pasta or with vegetables.

Notes

  • For a richer sauce, add a splash of white wine to the lemon juice and broth mixture. You can also substitute butter with a dairy-free alternative for a lighter version.
