Ingredients
  

  • 1 medium cauliflower head, grated into rice-like pieces
  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup green peas
  • 1/2 cup chopped bell peppers
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Optional: chopped green onions for garnish

Instructions
 

  • Grate the cauliflower using a food processor or a box grater to create “rice.”
  • Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the grated cauliflower and sauté for 5-7 minutes until slightly tender. Remove and set aside.
  • In the same pan, add another tablespoon of olive oil. Sauté the diced carrots, peas, and bell peppers until tender.
  • Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  • Combine the sautéed cauliflower rice with the vegetables and eggs. Add soy sauce, sesame oil, salt, and pepper. Stir well to mix all ingredients evenly.
  • Serve hot, garnished with chopped green onions if desired.

Notes

  • For extra flavor, add a dash of garlic powder or grated ginger.
  • You can add cooked chicken, shrimp, or tofu for added protein.
