  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric
  • 1 cup water or chicken stock
  • 1 loaf of white bread

Instructions
 

  • Prepare the curry base: Heat oil in a large pot and sauté onions until golden brown. Add garlic and ginger, and cook until fragrant.
  • Add the spices: Stir in curry powder, cumin, coriander, and turmeric. Cook the spices for 1-2 minutes to release their aromas.
  • Cook the meat (or chickpeas): Add your choice of meat (or chickpeas) to the pot. Stir to coat with the spices and cook until browned.
  • Add tomatoes and water: Pour in the chopped tomatoes and water (or stock). Simmer on low heat for about 30-35 minutes, allowing the flavors to meld and the sauce to thicken.
  • Prepare the bread: While the curry cooks, slice the loaf of bread in half and hollow out the middle to create a bowl.
  • Assemble the Bunny Chow: Once the curry is ready, spoon it into the hollowed-out bread. Garnish with fresh coriander and serve with lemon wedges on the side.
