Ingredients
  

For the Curry:

  • 1 Ib (450)g Beef, Lamb or chicken
  • 1 large onion finely chopped
  • 2 tbsp vegetable oil
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 2 tbsp curry powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 large tomatoes diced
  • 1 cup vegetable or chicken broth
  • 1 cup potatoes, peeled and cubed
  • 1 cup carrots, peeled and sliced
  • salt and pepper to taste
  • fresh cilantro, chopped for garnish

For the Bread:

  • 2 large white loaves of bread for garnish

Instructions
 

  • 1. Prepare the Curry
    Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until soft and translucent, about 5 minutes. Stir in the garlic and ginger, and cook for another 1-2 minutes until fragrant.
    2. Add the Spices and Meat
    Stir in the curry powder, coriander, cumin, turmeric, and paprika. Cook for 1-2 minutes to toast the spices. Add the cubed meat to the pot, and cook until browned on all sides, about 5-7 minutes.
    3. Simmer the Curry
    Add the diced tomatoes, potatoes, carrots, and broth. Stir well, then bring the mixture to a simmer. Cover the pot and let it cook on low heat for about 30 minutes, or until the meat is tender and the vegetables are cooked through. Season with salt and pepper to taste.
    4. Prepare the Bread
    While the curry is simmering, prepare the bread. Cut the loaves of bread in half, and hollow out the center of each half, creating a bowl shape. Be sure to leave a thick enough wall of bread to hold the curry.
    5. Assemble the Bunny Chow
    Once the curry is ready, ladle it into the hollowed-out bread bowls. Garnish with fresh cilantro, and serve immediately with the scooped-out bread on the side for dipping.
