- 500 grams okra (bhindi), washed and dried
- 1 tablespoons oil
- 1 teaspoon cumin seeds
- 1 large onion, sliced
- 2 medium tomatoes, chopped
- 1 green chili, sliced
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- Salt, to taste
- 1/4 teaspoon amchur powder (optional)
- Fresh coriander leaves for garnish
Cut the okra into 1-inch pieces. Set aside.
Heat 1 tablespoon of oil in a skillet, add the okra, and sauté for 8-10 minutes until lightly crisp. Remove and set aside.
In the same skillet, add the remaining oil and cumin seeds. Once they splutter, add onions and sauté until golden brown.
Add tomatoes and green chili. Cook until the tomatoes soften.
Add coriander powder, turmeric powder, cumin powder, and salt. Mix well.
Add the sautéed okra back to the skillet, stir to combine with the masala.
Sprinkle amchur powder if desired, cook for another 5-7 minutes, and remove from heat.
Garnish with fresh coriander leaves and serve hot.

- Ensure okra is completely dry before slicing to avoid any sliminess.
