Ingredients
  

  • 250 gm fresh okra (bhindi)
  • 2 tbsp oil
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/4 tsp amchur (dried mango powder)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions
 

Prepare the Okra:

  • Rinse the okra thoroughly and pat it dry with a clean towel.
  • Trim the ends and slice the okra lengthwise.

Heat the Oil:

  • Heat oil in a non-stick pan over medium heat.
  • Add cumin seeds and let them crackle.

Sauté the Okra:

  • Add the sliced okra and sauté for 8-10 minutes until it becomes crispy.
  • Stir occasionally to ensure even cooking.

Add the Spices:

  • Add turmeric powder, red chili powder, coriander powder, and salt.
  • Mix well and cook for another 2-3 minutes.

Finish with Amchur:

  • Sprinkle amchur powder and mix gently.
  • Remove from heat.

Serve:

  • Garnish with fresh coriander leaves and serve hot with roti or dal.

Notes

  • Variation: Add onions or tomatoes to enhance the flavor.
  • Storage: Best enjoyed fresh. Store leftovers in an airtight container for up to 1 day.
  • Serving Tip: Serve with a side of yogurt or dal for a complete meal.
