Ingredients
  

  • 1 cup khoya (milk solids)
  • ½ cup sugar
  • 1 tbsp ghee (clarified butter)
  • 1 tsp cardamom powder
  • A few saffron strands (optional)
  • Chopped almonds and pistachios for garnish
  • Silver leaf (optional, for decoration)

Instructions
 

  • Prepare the Khoya Base:
    Heat ghee in a non-stick pan on medium heat. Add khoya and stir continuously until it softens and begins to melt. Cook for 5–7 minutes until it becomes smooth and slightly golden.
  • Sweeten It:
    Add sugar to the khoya mixture and stir well. The mixture will become a bit runny as the sugar dissolves. Keep stirring until the mixture thickens again.
  • Add Flavorings:
    Sprinkle in cardamom powder and saffron strands (if using) to enhance the flavor. Mix everything thoroughly.
  • Set the Barfi:
    Once the mixture reaches a thick consistency and leaves the sides of the pan, pour it into a greased tray or plate. Spread it evenly.
  • Garnish:
    While still warm, sprinkle chopped almonds and pistachios on top. You can also decorate with silver leaf for a festive touch.
  • Cool and Cut:
    Allow the Barfi to cool for 30 minutes. Once set, cut into diamond or square shapes. Serve and enjoy!
